Okinawan Shoyu Pork


  • ½ C Soy Sauce (Regular Like Yamasa)
  • ¾ C Water
  • ¼ C Sake
  • 1 ½ Cups Brown Sugar Or Organic Raw Sugar
  • 4 Slices 3” Long Ginger
  • 2 Cloves Garlic Or 2 Tsp

  • simmer for 1 hr. make sure liquid doesn’t evaporate. don’t use high temperature (medium-low) to simmer. refrigerate pork and sauce in refrigerator until pork is cold and sauce forms whitish color skin over sauce. skim whitish skin and discard. sauce is now fat free. slice pork ¼” thick easier to slice when cold it doesn’t break apart. line 9x13 pan with aluminum foil (easier to clean pan) place in 9x13pan, pour sauce over pork and bake uncovered for 30 mins @ 350°.

    my oven took about 40 mins.

    I like to overcook things has a nice burnt color.

    don’t worry about size of pork because a large size pork shrinks a lot when cooked. especially for 1 hr of cooking you’ll be surprised at the shrinkage.
